Winemaker's Techniques
Weather conditions for 2019 were generally cooler and wetter than normal. Heading into harvest, the weather was cool and sunny, promoting good conditions for phenolic ripeness with acid retention. This year was considered a standout vintage for Pinot Noir, especially for sparkling, due to its crispness and fresh character. Gently whole bunch pressed to avoid colour and tannin extraction. Primary fermentation in stainless steel at relatively cool temperatures, and then tiraged six months later for second fermentation in bottle. On lees for over 48 months before being disgorged.
Tasting Notes
Delicate aromas of strawberry and white raspberry, layered with undertones of Macintosh apple and yellow plum. The long and slow yeast autolysis developed refined flavours of toasted almonds and biscuit, with fine and numerous bubbles, elevated by the solid structure, crisp acidity and full mouthfeel given by Pinot Noir.
